Everything in the kitchen Huckleberry Muffins

These are perfect to make for guests who drop by for morning coffee. You can whip these up with little to no ingredients that are left in your kitchen. In about 25 minutes everyone will have a sweet treat to enjoy with their mug full of coffee.


2/3 cup flour, sifted

1/3 cup spelt flour, sifted

1/3 cup old-fashioned oats

1/3 cup packed brown sugar

1 egg, beaten

¼ cup sour cream

1 tablespoon honey

1/8 teaspoon salt

1/3 teaspoon baking powder

¼ teaspoon vanilla

Dash of nutmeg

1/3 cup frozen huckleberries


Pre-heat oven to 400 F. Sift flours in medium bowl. Add in oats, brown sugar, salt, and baking powder. In a small bowl beat egg and add to mixture in medium bowl. Fold egg into mixture. Add in honey, sour cream, vanilla and nutmeg; mix well. Gently fold in huckleberries. Fill paper-lined muffin cups two-thirds full. Bake at 400F for 15 – 17 minutes. Let cool for 5 minutes and serve.
