I love using vegetables in breakfast recipes. These little quiches are so fun to make and will be a crowd favorite. Enjoy 🙂
2 yellow squash, peeled into strips
6 large eggs
½ cup spinach diced into small pieces
2 mushrooms diced into small pieces
1/3 cup shredded mozzarella cheese
¼ teaspoon pepper
½ teaspoon salt
¼ teaspoon paprika for garnish
6 compartment muffin tin
Pre -heat oven to 375 F.
Peel yellow squash into strips and roll strips into circular rolls. Place 6 squash rolls in each muffin compartment.
In a medium bowl mix six eggs and add in diced spinach and mushrooms. Add in cheese, salt and pepper.
Pour mixture over squash rolls and garnish with paprika.
Bake for 40 minutes.
